Something simple and delicious I enjoy are quesadillas. My favorite kinds of meat to put inside are chicken, carne asada (steak) and carnitas (shredded pork). Others like to also add different kinds of vegetables like onions and peppers, but I prefer to have only the cheese and meat. Yummy!!!

My enchilada casserole:

You can use boiled chicken or browned ground beef(or any meat, really, but those are the two I use.)

Chop up some green onion, cilantro, tomato and garlic. However much you like. If you like heat chop a jalapeno or two and add it in. I love this but my children do not so I don't put jalapenos anymore. Put it in a pan with the meat and cook it together. Season it with adobo seasoning. Cook until the veggies are softened. I always make enough filling for a 9x13 pan. So I take 6 corn tortillas and add a little enchilada sauce on the bottom. I then dump the filling in and cover it with 6 more. I poke holes and cover with a package of velveeta shreds. Monterrey Jack cheese could also work well. I then cover with more enchilada sauce. Cover with foil and poke a few holes. Bake at 350 for about 30 minutes. Enjoy with a mexican beer, especially if you added jalapenos.
