The trick to making carrot curls or radish roses is to have a very sharptools, a paring knife for the radishes and a potato peeler for the carrots, and a dish of ice water. Cut the veggies fairly thin, leaving as thin a hinge as possible and place into ice water. Using the same cutting technique as for radishes, it is also possible to make tomato rosettes. Do not place them in water.
You can cut 'fringe' into a green onion or celery by laying them on a cutting board and cutting into one end with the tip of the knife. Again, ice water is crucial.
The swans I have seen were done with apples. I have never had occasion to make them.
