If you entertain people at home, what's your favorite meal to serve? Also, do you generally serve family style or serve the plates "restaurant" style, or perhaps buffet?
The last dinner party, I started with pork & chive steamed dumplings, then shrimp in red eye gravy on spoonbread with roasted green beans, and dessert was rosemary honey sauce with fresh grapes over vanilla ice cream and ginger snaps on the side. It was good; there were no leftovers and everyone asked for recipes.
We have a sit down dinner, My favorite to make is chicken cordon bleu, rice pilaf, big salad and homemade creamed spinach. east to make and I prep the chicken the day before and just bake it in the oven the next day.
How and what I serve depends on who I am serving and what I may know about their likes.
If my guest are my husbands boss and clients, my Italian is alway asked for ahead of time. The last time I had this group I set up a serving buffett with three main dishes: Lasagna, Veal Scallopini, and Chicken Alfredo, a soup and salad station, and two deserts: Tiramisu and a Berry Custard Zabaglione. Of course there is bread and wine and olive oil and cheese. I set up the buffett in my breakfast area, the dining room table is appointed for seating and I set up a couple of smaller tables in other areas for additional seating.
If my guest are friends and neighbors, everything is very casual. Usually in winter cajun food; red beans and rice, jambalaya, gumbo, gator bites (if I can get meat) or spicy chicken are some of the most requested. I just put it out on the island and everyone fixes their plate and scatters to enjoy good food and friends.
Spring and Summer bring on the grill and lots of fresh veggies grilled with steak, burgers,or chicken.
I'll smoke a brisket and baby back ribs or make my famous nachos. No one ever leaves hungry.
