Didn't get to do this yesterday but will today.

Okay, you've convinced me: I'll try both. While I'm going crazy with cheese I may as well shake on some grated parmesan.

Even better! yum. We had a local restaurant that would make meatball sandwiches with huge chunks of fresh Italian bread, put cheese on it and pass it under the broiler. Oh, man.....

Do not open these threads when hungry....

I love Pizza Margerita with fresh mozzarella, basil, and fresh tomatoes.

But I love provolone, too--the strong stuff is tasty.

However, as much as I love cheese, I agree with Bella that too much can overpower your meal.

Both! I love the smokey taste of provolone, and it's a much "stringier" cheese than mozzarella...on pizza, I use both, plus, parmesean, and a bit of cheddar. Ymmmm!

I like them both and for different reasons. We always used mozzarella for dishes where melted cheese is required, pizza and baked ziti or fresh mozzarella balls for an antipasti. It's a soft, not to much taste type of cheese. Provolone, being a harder, sharp and a smoked cheese we use for sandwiches or on a cheese tray to nibble. I love provolone, salami and my stuffed vinegar peppers on Italian bread, so good.

Love sharp provolone - but hate the smoked stuff.
