We are greatly blessed in South-Central Wisconsin, having two of the country's premier chocolatiers either right in or just outside of Madison.

Gail Ambrosius Chocolatier • Gourmet Dark Chocolates*•*Truffles*•*Madison, Wisconsin makes simply UNBELIEVABLE dark chocolate truffles, the kind you must experience in tiny, reverent nibbles. Her flavoring combinations are creative, intense, and work unbelievably well. Ever had a curry truffle? How about a trois poivres (three peppers) chocolate? Cardamom, perhaps? All available at Gail Ambrosius, and all ambrosially wonderful. And all within two miles of my house, making it really, really hard to resist a daily stop by there on my way home from work.

Candinas Chocolatier - Equal parts artistry, science and love is our other premium chocolatier here. A Swiss gentleman runs this one, out in Verona (a suburb just south of Madison) and his truffles are also incredibly good. He offers the full range, from white to milk to dark chocolate, rather than the all-dark experience of that Gail prefers, and his flavor choices are also wildly creative and very successful. Consumer Reports Magazine does an annual chocolate rating in their February edition, and Candinas has been rated among the top three chocolatiers in the country for a number of years now. Although I suspect that if Gail marketed her wares at a national level, she'd quickly earn a similar rank.

And you thought that Wisconsin was only known for brats, beer and cheese!

I thought their truffles were not bad at all, if not quite as good as homemade.

We have Fernandina's Fantastic Fudge and it's quite tasty.

Russell Stover is good, though I guess we could say they're regional. They originated in Colorado according to their website, but they've grown quite a bit. Russell Stover, Whitman's, Pangburn's: America's Chocolate & Candy Store

Well, now I am hungry for chocolate. The only thing in the house is Girl Scout cookie Thin Mints. Thank heaven for that!

Not to get too pedantic, but there's a difference between a chocolatier - someone who makes confections from chocolate - and a chocolate maker, who makes the chocolate itself. Almost all chocolate is produced by one of three huge conglomerates, then sold to the chocolatiers who make candies. There are artisan chocolate makers who actually produce chocolate, but most chocolatiers are using someone else's chocolate to produce their goods.

Wow, that's even more expensive than See's! Looks awesome though, and is probably about 5 miles from my house to boot.

In Woodbridge Township, NJ, there is a small gem. It's called Chocolate Alley, I just love their chocolate. I especially love when they close for the summer, I get to stock up on my fave's at 50% off.
