I was in Memphis for so long I'd have to say BBQ.

Then I moved to CT so that would be Pizza.

Then we went to HI so... We love poke SOOO much but it's probably better known for pineapple. (and the pineapple ice cream at Dole is to die for!)

Now we're in Atlanta and I have no idea!

Texas: brisket, chili, kolaches, pecan pie, tex mex, stuffed jalapeños, bacon wrapped jalapeño shrimp.


Bacon wrapped jalapeño shrimp:

Clean and quarter fresh jalapeños ( no seeds!)
Take fresh gulf shrimp and clean off heads and tails
Take a half slice of bacon and wrap it around the jalapeño and shrimp, tucking the ends underneath.

Grill or broil until the bacon is crisp. The heat takes most of the spice out of the jalapeños.

You can use soaked toothpicks, but I've never needed them.

While that's very interesting, we're discussing Hawaiian Poke which is a whole different "animal".

My error. I had noticed hunterseat was in Atlanta. so I Jumped to the conclusion he was speaking of the Southern Tradition

Following the whole train I now see it was HI Poke being discussed. I'm a former Southerner, ex-Texan. Poke automatically means Poke Greens to me.
