I like one with lime jello, cream cheese, walnuts, pineapples... some other stuff I cannot remember. Good stuff.

See gelled foods a lot in old cookbooks. They are now often considered "kitchy" by some. Another faded trend in part because it involves more prep time than some people now think they have.

Jiggly or slimy--I think there might be a visual sense of fatty, non-healthy eating. It's not necessarily off the mark. Gelatin is actually an animal product (boiled down collagen, I think). I know vegans can't have it. Agar agar is a substitute, though I think it goes opaque and not translucent, and that can be even more visually unappetizing.

Still, I'll take a cold slice of grilled vegetable terrine in aspic over most any other side. The eggplants are still producing...maybe add a layer of zucchini, tomato, mushroom with some basil. Our Thanksgiving salad!

I have an old Farm Journal cookbook. I was aghast when I saw this picture of some molded gelatin thing with meat and olives and things that just didnt look like they belong in gelatin. I have never ever eaten a salad like that. That said, I do have a couple "sweet" type gelatin salads that I will make occasionally for my son. Like the one with strawberries, Cool Whip, cream cheese and a pretzel crust. Or I have one with pineapple gelatin and a similar Cool Whip/cream cheese mixture with basically a pineapple curd on top. But no meat goes into my gelatin-ever. LOL!

I personally hate Jello. If you've ever had a hospital stay you would too!! My wife makes a jello for Thanksgiving though that really is well liked. Has red hots in it I think and nuts and such. Whipped cream on top!! Can get recipe if anyone wants it!!

I like jello but the last time I ate jello it was lime jello. I thought it had pineapple in it but it was pickles. I have not been able to eat jello since then.
