I do. I keep it in a small container in the fridge for when I'm making home fries, anything that calls for bacon and I don't have any, etc. (yea, I know it's not good for me, but either is water, air, or driving, so I'm ok w/ it).

I never toss it, and I never seem to have enough, as I don't cook much bacon now that the nest is empty.

Bacon grease is one of my most useful cooking tools.

I recently saw a recipe on Mark Bittners blog about making mayo from bacon fat. Talk about a heart attack on a plate....but wow, would it be good on a BLT!!!

Yes I do. In fact I browned all of vegetables for the Brussel sprout hash that I made the other night before adding the rest of the ingredients. It was awesome.

You know I really should, but no - I don't, and I'll tell you why. I don't pour any meat fat down the drains if I can help it, so it all goes into a jar that I keep under the sink, but it's all mixed; pork, beef, chicken, lamb...it'd be a pain to keep separate jars, so maybe I could just use one for bacon fat and keep it in the fridge instead of under the sink.

It is a shame to just toss it when it has so much usefulness.

I do.

Yesterday I made shepherd's pie, but instead of mash I browned sliced potatoes in my saved bacon fat, topped the pie with them and baked it till they went golden and crispy...mmm mmm.

My neighbor came in while I was cooking and said how good the house smelled - it was the bacon!!!

I just started doing this. It's not terrible for you if you use it in moderation. Shortening is actually worse because of the hydrogenation.

I love my Brussels sprouts and many other vegetables sauteed in bacon grease. But being on a budget, I don't buy a lot of bacon, but I do buy those cheap packages of pork fat to render. Only 79 cents a pound and the resulting crunchies (called scrunchions up in Newfoundland) sprinkled with salt are mighty tasty with fried eggs or on rice.
