Hi Nicole. I'm glad that you mentioned this -- it will be dinner later in the week. I'll have some ground beef left from a large pack that I didn't have time to separate into patties, etc. before I put it in the freezer. It has literally been years since I've fixed this for our entree and it sounds delicious.
Anyway, since you have a good bit going on with the beef and rice, I would fix a few plain vegetables. Some steamed broccoli with lemon and butter and cooked carrots sound good. (Is it dinner time yet? LOL). Slaw would be another good side and give you a little "crunch". Add some cornbread or soft "pull apart" rolls and you're done! What a yummy meal.
Roast some fresh red bell peppers under the broiler,when totally black take out wrap in foil on counter for ten minutes.Peel off the black skin, quarter peper and remove seeds and enjoy!
I'd stick to a theme and make cornbread and collard or turnip greens (or even spinach) with a little bacon or ham. Frozen is good if fresh is too much trouble, both are better than canned.
My mother typically served Dirty Rice with cornbread and turnip greens. I remember when we had a garden and had harvested "a mess of greens", my mother putting them in the washing machine in the rinse cycle to wash off the sandy residue. I love Paul Prudhomme's dirty rice recipe. The seasoning is just right.

We like ours with some coleslaw--especially good if you make the dirty rice/rice dressing good & spicy.
I generally serve it as a main dish, not a side, as we like it made with chicken livers.
