My friend from Italy served a great salad that was super simple: arugula + strawberries + a little bit of mozz + a light balsamic/evoo. Season to taste w a pinch of salt and or pepper. Heh, the gimick that worked out too was that he chilled the salad forks in the freezer before serving. Said he always wanted to try it after hearing it in some movie dialogue. It worked.

I am guessing the op has already decided on a salad, being this is a very old thread, but still a fun one; love to see some of these old threads pop back up. I think almost any salad goes well with roast pork: summer time I am inclined to do a fruit salad, but otherwise a nice cold slaw or a rice salad works well. and the old standby, carrot and raisin salad is a winner in our book.

Fruit salad, something sweet & tart, like blood orange sections, chopped granny smith apples, rings of red onion, tossed with a dash of really good (Modena) balsamic vinegar.

Actually, the "Poke Salad Festival" is held in Blanchard, La, the "Poke Salat Festival" is held in Arab, AL, the "Poke Sallet Festival" is held in Harlan, KY, and the "Polk Salad Festival" is held in Harriman, TN.

For compzny, I'd do a broccoli red grape salad. It can be made a day ahead, except I'd add the sunflower seeds at the last minute. There are probably 100 of recipes for broccoli red grape salad on line.
