Yes, it cuts off like a conventional turn signal. To turn it off you tag the swith again to turn it off, when passing someone.

In older big trucks the signals do not cancel after a turn, it amounts to paying attention to what you're doing. Which, last time checked, was part of safely operating a motor vehicle.

So you see there is a reason why late-Ford car/truck drivers don't use turn signals much.

On my Boss, bumping the stalk will make it blink 3x and then shut off.

yes... exactly

on our 2013 Ford Edge, you push the signal just a bit to get 3 blinks, like for a lane change. If you push up or down on it harder, it will stay on till you complete your turn.

So maybe some people just aren't smart enough to figure out a smart turn signal.

Yup. Easier to blame the brand rather than the mouth breathing window licker behind the steering wheel.
