I am not familiar with all the taxes around the metroplex except for our immediate area. I will say you should avoid Southlake if you are trying to get away from higher taxes. They have some of the highest taxes in the state. My mother in law lived there back in the 70's when it was still very rural. She finally sold her land in the 90's due to ridiculous taxes, not to mention it lost it's rural feeling. I have heard from friends that Denton county taxes are less than Tarrant or Dallas. You might look into the Argyle, Justin or Ponder area. Another area that has pretty land is up around Krum in Denton County. I haven't been there in a while but we looked at property there a few years ago and it was quite rural. My brother in law lives in Terrell on some land but it's really growing out that way from what I understand. Anna and Melissa in Collin County are pretty and I think there is still land left up there. (probably not for long though) Good luck!
