See how you can get rebates and rewards for stuff you'd purchase anyways. Sometimes it's having a credit card that does frequent flyer miles or hotel points or gift cards. (We've got a no fee Citiank card that we get a decent number of Thank You points for using) You can also do e-bates shopping or Amazon's mechanical turk program and put money earned from those programs toward a vacation fund. I'll also do surveys at e-rewards.com for a few additional frequent flyer miles.

If you can (like if you have with no kids out for the summer), do it off season for cheaper flight and lodging. If they're accessible, you might want to curb some of your eating out (not all of it, I think trying out restaurant should be part of the vacation experience) by shopping at grocery stores for breakfast (bagels, fruits, yogurt, muffins), packed lunch, snacks and plenty of bottles of water (don't buy from parks unless they won't let you bring your own drink/food). It's probably healthier for you too. Ask for a room with a mini fridge.
If you have AAA, you could check out some of their deals. Some of them are pretty good. If not, ask for your family and friends with membership.
It's possible to even have a free trip today, if you're adventuresome enough and wish to indulge in some medical tourism in some third-world countries!
And then the question, how much comfort am I willing to sacrifice? You can do NYC very, very cheap if you're willing to sleep on a bunkbed in a hostel for as cheap as $10 a day and eat off the dollar menu at McDonald's. You can buy a 7-day subway pass there for $30, and that's the only transportation expense you'll have. The Staten Island Ferry is free! And who needs Times Square, if you're a great people watcher!

Breakfast is the cheapest meal to eat in a restaurant. Eat a huge breakfast as late as possible, then have sandwiches or pizza that night. Avoid the hotel restaurant, cheaper prices are always at the Mom and Pop place down the street. If you must have bottled water ... buy one and don't throw the empty away. Refill at drinking fountains.
