Thanks so much for the video on freezing greens today at the farmers market I bought ten bunches of kale and I got ten five cup containers, while watching Your video I saw the extra pot liquor go down the drain it sent a chill down my spine, I know I'm different than most in a lot of ways but to me pot liquor is the gold standard of hot drinks. today I cut the stems up and cooked them in a separate pot don't know how it will turn out if not eatable it will be drinkable. Again Thanks!

I have quite a bit of parsley and carrot top greens that I will dry.

Because I do not have a dehydrator, I'll do it the old-fashioned way of hanging the leaves in a dark, dry and cool spot.

That liquid is called vegetable stock - something that I do not let go down the drain either!

Temperatures are below freezing now at night. I have covered my garden plants but will have to harvest the remaining abundance.

I have quite a bit of parsley and some cilantro that needs to be harvested. I will try freezing the individual stemmed leaves on a baking sheet in the freezer and then transfer to freezing bags. It won't be the same as the fresh herb but will be a welcomed addition to dishes during the winter.

Freezing eggplants:
Does anyone know if you can freeze Japanese eggplants WITHOUT peeling them?
All the internet info says to peel them.
Thanks

Those of you who can tomatoes. Do you guys use the wide mouth jars?

I bought 24 Jars for $25.00US. 32oz Jars. Then I realized they aren't wide mouth.

So maybe the wide mouth is easier to stuff in the tomatoes in?

What are the positives and negatives of each?
