I've planted some beets and carrots in containers, and they appear to be doing really well. Started from seed, outdoors, in grow bags.

The beet seed packet says 59 days to harvest, and the carrots say 65-70 days. I know those are estimates only as growing conditions can impact such things, but in general, how do I measure the number of days? Do I start counting from when I sowed the seeds, or when the first tiny sprouts popped up, or from when the sprouts got to a certain size or showed some type of green/leaves, or...

Its from when you first planted the seed to when you harvested it.


But if you started indoors its when you first planted the seedlings outside.

The only thing that works is when the shoulder of the root breaks the surface and looks big enough.

I've never had much use with harvest dates. They are just a suggestion.
