My sentiments exactly. I am also in the same position. I found a great apartment and offered to pay the entire lease upfront and I was rejected.

I can get a 1 bdrm at a decent price and can live off my savings for a little bit just not sure if places would rent to you without having a job and no proof of a job. Anyone been able to do this before and how?
I did this, but moved in with family for a few months until I found a job. If you are moving where you don't have family or friends, this idea won't help.

My only suggestion is to try to find a place that will take several month's rent in advance, so that they know you are staying for a while and they already have their money. There is no risk to them at that point.

On a couple of occasions I've moved to a new city without having a job. In one city, I just wrote them a letter and told them that I would be getting a job. They rented me the apartment without a problem. And in another city, I wasn't planning on working, just taking a few years to goof around. I just paid a bunch of rent upfront and they were okay with that.
