Never used this before .. but we are renting a 10' uhaul from Roanoke VA to Palmer MA just house hold items cause we are moving.. do we need a medical card? Do we have to stop at weigh stations?

Whether you have to stop at weigh stations or not depends on the state. Simply google "do uhauls have to stop at weigh stations in ___" for each state on your trip.

As for the medical card: what does having a medical card (insurance card?) have to do with renting a U-Haul to move your household stuff? Sorry, I'm confused by the question.

No, you do not need a CDL to use a rental trailer, therefore, no Medical certificate is required. You do not have to obey any of the rules and regulations that a CDL holder has to contend with, either (logbook, time-in-service, etc.)
It is highly unlikely you will be required to stop at weigh stations in any state, in a non-commercial vehicle, whether you have a rental trailer or a rental truck.
The agent at the rental agency should be able to answer all your questions. It is his (her) job to know the answers.
