Asheville I can imagine from everything I've heard about it, but a visit would be the true testament. Chapel Hill is nice, and progressive would be a good word for it as is much of the Triangle area of NC but I didn't get the feeling that a palpable "ultra liberal" vibe is there. My sister and brother in law are conservative (and Evangelical) and live in Raleigh and they love it there and seem like they are in good company. Sure it's more liberal than many other parts of the South, but on that scale it probably isn't anything like Berkeley or Eugene.
Have you checked out Burlington, VT? Very liberal, a bit pricey but not overwhelmingly so and they have pretty low unemployment. Boulder is very liberal, Denver comfortably liberal. You can garden there but that area is famous for extreme temperature swings in the shoulder seasons so not the best place for it.
Asheville is an excellent fit if you can find jobs. That's the problem - all your like minded brethren and sistren are flocking there.
Could you be satsified with an ultra liberal community in the context of a larger town? Is Pittsburgh big enough to have one? That way you'd be close to the folks for visits.
