Washington between the Pacific Coast and Idaho border has a lots interesting varied landscapes to take in.
I like Arizona south to north along I-17 transitioning from hot desert valley, saguaro covered hillsides, on up into the ponderosa pine forested lands with high mountain peaks then on up into red rock country beyond that.
The back roads and even the interstates in Vermont are tranquil and pretty.
Any state out west is pretty interesting to drive across, I love driving around NM, lots of surreal landscapes.
Those are two of my favorites, Oak Creek Canyon AZ. Washington probably the drive around Mt. Rainer.
Edit: The Hawaiian Islands! Doing the road to Hana in a week from now.
Not one state but here is the drive to make. Start in Denver drive to Aspen down to crested butte and then over to telluride and hit ourray silveton during then over to mesa verde. The drive west to Moab and up through to salt lake. Then take the back roads up by bear lake and hit Jackson Wyoming grand Tetons and Yellowstone. Finally head west through to Lake Tahoe and drive down to Yosemite.

I love the drive on the north end of the Big Island on the road between Kona and Hilo going through Parker Ranch and Waimea, then decending down into the lush rain forest along the coast. Truly amazing drive!
California. Mountains, desert, ocean, farmland etc. Best variety. Huge state. Something for virtually anyone.
Except the highways can be very un-scenic, except for the one that hugs the coast. I wouldn't recommend CA for a scenic drive-through, unless the OP would have the time to take Hwy 1 down the coast.
I guess it depends on what he means by driving through; just blasting through on a major highway, or taking a vacation to meader around and see all the scenic spots.
The most beautiful state is New Mexico followed by parts of the other 4-corners states and then the Pacific coast states. Every state has some beautiful spots.
