Missouri has a little projection, "the bootheel", that pokes into Arkanses. Missourians say that they ceded the Bootheel to Arkansas, the average IQ in both states would rise by two points.
I wouldn't say California makes fun of Arizona, but it is often heard as Arizonans referred to as "Zonies" and it's almost always used in a derogatory manner. When the desert gets hot, Arizona license plates are all over San Diego. They don't drive the way we do here, street parking becomes scarce, restaurants and bars become packed, often frustrating the locals.
The way I've heard a lot of Iowans talk about Nebraska is humorous. They often act like the whole state looks like the western third when in reality most of Nebraska looks very similar to Iowa.
I actually agree with this. The states are very similar on pretty much every front, with NW Nebraska looking more like Wyoming and NE Iowa looking more like Wisconsin.

Yes, northwest Nebraska looks a lot like Wyoming. You can see prairie dog towns and antelope as you get further west but certainly once you get past Ogallala (probably much sooner) you won't see those. Northeast Iowa is pretty unique compared to the rest of the state. A lot of people seem to have an image of windswept prairie and badlands for North Dakot when in reality that's only the southwest part of the state. Much of the state looks similar to Nebraska and when you get to Jamestown and certainly once you hit the Red River Valley it looks much more like Iowa, complete with some pretty black soil. Then you cross into Minnesota and there are suddenly more trees. It's really neat to cross over from Grand Forks. You get into the northwoods area of northern Minnesota pretty quickly.
In Alabama, the state most joke about is definitely Mississippi. I’ve always enjoyed my times in Mississippi; the main difference is its lack of larger cities. Much higher proportion of rural areas/small cities.
I am not so sure what neighboring state the state I live in makes fun of, but I can 100% for sure tell you that every neighboring state makes fun of the one I live in the most.

Based on your coordinates, I don't think Oklahoma has much interaction with New Mexico - even though they are technically neighboring states.
None in Seattle. Oregon is too similar to here and the kinds of people who move here usually like it as well, while Idaho is in a totally different cultural sphere and I rarely even hear it mentioned.
Tacoma is a common stand-in for this.
Idaho is the neighboring state Washingtonians make fun of.
