Me personally, I think the Cabildo (Louisiana History Museum) and the WWII museum are much better than the Civil War museum. I would take ReluctantGardenStater's advice as well. Achafalaya would probably nicer for a swamp tour. Barataria and Lafitte (in NOLA) aren't bad though. I don't know about Honey Island.
I forgot about The Presbytère, the old U.S. Mint, and the Insectarium.
Say, Desertkid-if you elect to go to Breaux Bridge, Mulate's is a must do-a Cajun restaurant with a dance floor. The food is good and we really had a good time there. Some La'ns may disagree with me, but I enjoyed it. It is authentic to the bone.
