I'm leaning towards I-16 as it seems I-75 is more heavily traveled and has more trucks. Is that accurate? Either route is about equal from my start point.

I-75 and I'll tell you why...
First of all, it's a shorter distance, even if you're coming from jacksonville (assuming you stick only to interstates) and that will save you money.
Second of all, I-16 is a terrible bumpy concrete-paved p.o.s. road with lots of potholes and/or pothole patches and lots of those expansion seams. It will be like driving over a causeway the whole way... buthump...buthump...buthump...buthump.
It's really unpleaseant and it more than cancels out any pleasantness that would be gained from having less traffic. Concrete roads are also more slippery in the rain.

I-16 isnt paved, its cement, which is More expensive than this paved asphalt of yours
I-16 is more of a scenic route
You may find I-95 as an interesting route but Its true that 16 is very boring
75 Is a lot more exciting and many cars travel the road
75 also has a lot of construction going on around the larger cities, So expect traffic
due to traffic 16 just might be faster
