Anyone ever collect and use the water that condenses from an AC unit? Looks like this is a lot of water going to waste.

Sure, water from ACs and dehumidifiers has many uses. One just has to be aware of the resource, and figure out how to take advantage of it. Matter of fact, there are commercial installations, both static and active, that rely on the principle to generate a water supply where natural resources are scarce.

I live in Denver, so there isn't much condensate to collect. A very small amount drips into the basement floor drain.

Depending on the size of your room, you can probably purchase a window unit for about $150.

There is often more than H2O in condensate.

The condensate comes from the outside surface of the cooling core,(on a window unit, the one inside the house) it washes down any dust, dirt, fumes or particles that may be placed on the unit by the air flow, so it is not pure water. Also if you are in a slightly corrosive area there will be Aluminium Oxide from the unit breaking down chemically.
Use it as a supplement to other water sources for plants, Not for consumption by people and animals.
