I would prefer a hybrid but they are hard to find used around here and we won't buy 'new' cars so, what is the next best option? Which car gets the best mileage after they hybrids, Corolla maybe?
VW diesel powered cars, also a good choice if the price is reasonable. Many get close to 50 mpg on the highway. You need to check out the local price difference per gallon of fuel and work out the cost per mile to see if you're gaining in overall expenses. A lot will depend upon your driving requirements ... highway or city use. If you're commuting in stop and go traffic, the diesel will also be more fuel efficient (uses less fuel idling than a gas motor). For strictly local driving/short trips in non-traffic situations, not as good a choice as a gasoline powered car.
If best fuel economy is the prime consideration, then you might also consider Suzuki's line of small cars.

We have a 2001 Toyota Echo that we use for our "work" car.. the car we drive to work and when we run errands without the whole fam. It is FABulouS on gas! We own a pizza restaurant and all of our delivery drivers are jealous of the fantastic gas mileage it gets. Plus it's a Toyota so it runs forever, actually since we've had it.. we've never had ANY problems with it at all.. and we have had it since like 03 i think. Just keep regular maint..(oil, tires,etc..) and gas her up (infrequently ehehe) and go
We have a 2001 Saturn SL2 and it gets great gas mileage. I'm not sure about city driving, but we recently took a 6-hour trip on the interstate (speed limit=75), and got 38 mpg. That seems to be very competative with the current hybrids out there.

A friend of mine used to drive a 1982 Volkswagon Rabbit that had a 4 cylinder diesel engine with a standard transmission. I am yet to find a more efficient vehicle, hybrid or not. The vehicle averaged about 50 mpg in the city - considerably more on the highway.
He spent next to nothing on fuel, but it was very difficult to find a date to spend the savings on.

We have a '98 SL2 and now that it is over 100,000 we are having a lot of problems with the car. We are keeping it for our 16 year old to drive but I am not interested in another Saturn after this experience. Not that they aren't ok cars, we have owned Toyota in the past and have NEVER had issues with them.

I know, our old Toyota got 45 mpg/highway. They just don't make them like they used to.
