Not disagreeing that a roadside vendor is definitely higher risk, but plenty can and does go sideways in the conventional food distribution pipeline.
I have a 10 gig hard drive containing every email I ever sent or recieved in 15 years in my role as there were a number of situations/decisions made that were unethical or illegal.
Memories often seem to get very fuzzy when the subpoenas start getting handed out.

Over the years, I can recall several instances in restaurants when I was served shrimp that had been soaked in bleach-water to kill bacteria and extend it's usable life. It looks like shrimp but tastes like bleach.

Yuck!

We've got roadside shrimp and crawfish stands here (There's a large aquaculture industry here - shrimp, shellfish, catfish, etc) I only go to one of them because the shrimp are raised in saltwater and no antibiotics. The same folk raise excellent - and huge - crawfish as well and they're in season right now. Tasty Eating!

Sounds delicious. I can't say I'm the biggest crawfish fan, but I did partake in a few boils when I lived in New Orleans.
