Extra virgin olive oil burns with heat. It should be used for salads or in cool sauces. Use regular olive oil for cooking as it doesn't break down with heat. Info from my neighbor, a professional chef.
Coconut oil for moderate/low heat, avocado oil for high heat cooking. Make my own ghee for recipes where coconut oil wouldn't complement the flavors e.g. tomato sauce
What's wrong with Canola oil? Why is no one using it for cooking?
A lot of people do use it. Personally I hate canola oil. I really dislike it's taste and if used on high heat it imparts that horrible taste to the food. It tastes very fishy.
My favorite cooking oil is peanut oil. It does not burn or smoke at high cooking temps. It does not have a discernible taste and it's fairly healthy. The only problem is of course that some people have a severe allergic reaction to peanut products. It's also quite expensive. So as a good alternative I usually use sunflower oil. My wife, who never cooks by the way, is always buying some kind of oil or other. I have, grape seed oil, flax seed oil, coconut oil, hemp seed oil and others in my cupboard. I usually use them on salads.
