I don't know if this has ever been done- but I was just wondering: Is it possible to close up a kitchen window and replace it with more wall? So there would no longer be a window in a kitchen- just more wall there. Can this be done?

Sure you can. People do it all the time.
The question is, can you do it WELL? Doing it right involves studding in the hole, insulating, wiring (if necessary), and finishing both the interior and exterior.
So don't just jump blindly or impulsively into it. It's a big job.
My house needs more windows (and it has 13), not fewer.
There are a LOT of reasons people move, or eliminate, windows. I recently eliminated a window in my office building, because I needed more wall space. It's a lot more common than you'd think.

So don't just jump blindly or impulsively into it. It's a big job.
Please check the building codes to verify if for any reason a window is required. Egress possibly.
