I don't have space for a dish drying rack so we either: (a) use the dishwasher or (b) my husband puts them in various places to try, which I don't like. So I think for Christmas he is getting one of those towel things or drying mats that he can lay out and then roll back up.
I have same setup you're describing and a large single-bowl sink.
I don't like dish-drainers personally. I have a couple of drying "mats" (you can find them near the dishtowels just about anywhere these days) that I use for hand-washed things. I set them there while washing, and let them drip for a bit and then towel-dry and put away. Same concept as setting them on a dishtowel, only it's more absorbent.

I have a good man. He lets me buy him things from "Domestic Corner" (name of the business) without complaining.

No and I never have. I store my folding dish rack in a bottom cabinet near the sink when not in use. I wash and dry my dishes at the same time. (I also have never owned a dishwasher.) Personally, I think keeping a dish rack on the counter or island is tacky, looks like clutter, and therefore is not a part of my decorating scheme.

Is it too late to reconsider putting the main sink in the island? There's a reason such a setup is not very common.
I love having my sink in the island. If it wasn't in the island, I would be staring at a blank wall instead of facing out into the rest of the great room where I can look out the window, talk to other people, watch TV. Wouldn't want it any other way!

Ditto.. Except my sink is on a peninsula overlooking the great room.

The beauty of a new build is you can put sinks in front of windows.
