When I was remodeling my kitchen, I decided to get a cast iron white sink, as I always did. I just like to SEE it spotless, white and shiny, and I think they are timeless

If you can appreciate the sinks "character" then go for it, otherwise no. I have a copper range hood that rocks a beautiful patina, but I think a kitchen sink would be very hard to maintain.
I have a copper sink in kitchen, we love it but sometimes it challenges my OCD tendencies. You have to be careful with what you leave in the sink (glasses left will leave a ring for a bit) and rinse it after doing dishes- like if you rinsed off anything acidic. We do like the bit of character and it was a refreshing change from stainless visually for the time being.
You have to be ok with the changing pantina. I like it but others may not. I use barkeeps friend when I want to (almost) restore it to its shiny newness. It does get a little greenish around the drain but that doesn't bother me.
