I bought a pub table that's 36" tall.

What would be the standard seat height for matching chairs?

I'm buying used and may have to drive acways so I don't want to come home with oddballs or too high or too low...

24" from floor to top of seat.

My island is 36" and I just measured the chairs we have. Look for "counter height" chairs.

You don't always have the luxury of finding the perfect height for stools and chairs. The rule of thumb is 24-29 inches from the floor for tops that are roughly 34-39 inches high. So roughly 10" of difference will make it.

You'll find stools in varying heights- which can make using dimensions somewhat difficult.

You're looking for "counter height" stools- kitchen counters are right at 36". Whether the stool is 24, 25, 26, 27" tall @seat height will be more of a "what's comfortable to you" determination.
