I actually like your original idea of black and white checked vinyl flooring. But, as much as I love Talavera tiles, I don't think they fit with your decor.
I also really hate tile flooring, because it's a pain to clean. Also, the robot mops/vacuum cleaners have a hard time cleaning them. A friend of mine bought one for herself during Black Friday and was lamenting to me about how it won't clean the tile flooring, so she returned it.

My daughter bought a 50's home in Oakland, CA with a tiny kitchen. It had a black and white floor like the above, white wooden cupboards like yours, and a little retro gas stove and tiny old fridge with the rounded top. It was so cute.
She just had old formica countertops. It all just looked perfect.
I agree it would be too weird to move that wall and move the fridge. It seems like dead space, but you need it for traffic to the bathroom and other rooms and closets.
I love your style. Very eclectic. I'm an eclectic decorator, too. My look right now is somewhat Bohemian, but I never completely adhere to any one style when I decorate. I just do what I like.
I also think the black and white kitchen flooring would kind of synch with the black and white checks in your dining room on the chairs.
If you wanted a bigger stove, I'd use the space to the left of the stove, as you mentioned. You'd end up with less counter space, but I'm wondering - do you have enough space for a tiny island table in the middle of the kitchen? I have a tall but thin bistro type table that I use as an island in my tiny kitchen now. It gives me much needed counter space. It came with two stools that fit under it, but I use the space under it for a bin on coasters for dog food, and my dog's dishes are under it. I use the stools elsewhere in the apartment.
Here are some ideas for a little island table, if you have room. I saw that one has some shelves on the end, and that would give you some more storage:
