So somehow the rubber part of the doors that holds the shelves and creates the seal for the door has come loose. What can I do? Is there some sort of glue that would be good to use?

The rubber seal is holding up the shelves? Something is wrong there. That seal should not be holding up anything. Maybe just a miscommunication.

However you Can glue the seal back on, but it may not seal properly. It is really hard to get it right. Better usually to just buy a new seal.

There are lots of different glues that you can use. Silicone adhesive, gorilla glue, epoxy, all should work. There are lot of other options as well.

The rubber gasket around your door has worn out and you need to replace it. Get the make and model of your fridge and call the manufacturer. Can't buy them at home centers. There are online suppliers that you can order from.
