I have a single light bulb in my garage and plan to use one of these to gain an electrical outlet for a work lamp to use while working under the hood of my car:
Shop Project Source 660-Watt Black Medium Light Socket Adapter with Pull Chain at Lowes.com

Those socket adapters only come with 2 prong outlets, which leads me to my question: What's the difference between a 2-prong and 3-prong work lamp? Is the 3-prong safer to use?

3 prong is a hot neutral and ground prong where two prong are just a hot and neutral. Three is better than two if truly properly wired. Especially in a garage where you may have wet ground and possible cut or frayed cord

Anything electrical that has a metal body, should have a 3-prong connector........especially in a shop.

I see quite a bit of electrical tools, lights, appliances that have metal bodies that are
non-grounded........dangerous! There is a really nice heater space heater that I have been looking at........metal body/2 prong plug.........dumdumdum-dumbness to save a few cents.

Don't forget the geniuses who break off the ground prong because they only have a two prong outlet.

Can you replace the current lamp socket with this style ?

GFIs are wonderful things. Just put one in a garage outlet and ignore the 2/3 issue.
