Absolutely don't put out the money and replace with quartz if you already like the arctic white. Just get absolute black (or any other black variety) of granite. We have black granite and it's basically timeless. I'd find black and white contrasting granites to be sexy.
i definitely agree not to add another stone in there, especially quartz, which looks like a composite when side by side with natural stone. It's either all quartz or granite. Wood? Ehhhhhhhh
I think the reason you are conflicted is because the black island makes the kitchen look a bit cluttered - takes your eye away but there's no place to settle.
The black island is very classy looking but the black top is the problem; your eye goes to it rather than to the lovely countertops on the rest of the kitchen. Butcherblock would not solve the problem on the island; just give you another confusing thing. Before I did anything else I would keep looking for a close match to your countertops.
Would not advise red; you are just limiting yourself for the future if you do that.
