My guess is they were intended to vent some of the heat that builds up in those ceilings. Maybe the installer didn't have a talk enough ladder. or that's where the electric is located.
Maybe there's humidity that builds up. Was there ever a hot tub in that room? A wood stove?
What part of the country is this? Is there a roof vent for these? A switch?
Maybe there was a contract that called for two fans to be installed but it didn't specify that they actually work.
Maybe some guy did it to get his wife off his back....

The hot tub is a very real possibility, but you’d think it would be exhausted outside somehow. Is there a 220v outlet in there?

This room has soffit (spelling?) vents on the outside roof that overhangs.

There is a wall switch for them right next to the light switch.

I dont think they are going to be able to figure out what they were for, people do some strange things to their houses, they could have been put in for all sorts of reasons, if they had stopped using them, since the ceiling is wood, they could not just patch the holes very easily either (like if it was normal drywall), thhey would have had to install new wood, so maybe they just left the fans in place...it could be just about anything.

You have to know what the fan may be used for. You need to check if the fan is pushing air into the room or exhausting it from the room. Most probable reasons for the fan.

1: Heating/air conditioner does not get enough air to that room, to cool or heat it. This type fan system, is often installed to increase the air flow from the heating/cooling system to make the room more livable. In this case, the fan is pushing air into the room when they are turned on.

2: If sucking air from the room, the fan is exhausting air from the room, and may be venting it if they had a hot tub, used as a smoking room, indoor plant nursery, so fan kept that rooms air from going thru-out the house.

Find which direction the air is being moved, into or out of the room, is the first thing you need to know to get any idea of what the fan is accomplish.
