Not true with gas. Fire doesn't care if the bottom of your pan is out of flat by 1/32". Or even 1/4". What you said only applies to stoves where the heat is transferred by contact to the pan bottom - in other words, calrod. Induction and gas don't care.
You need to learn how to cook.Use the proper burner so the flame does not come up the side of your pot ever even on high.Never melted a pot handle in my life.You need some education on the proper use of a stove and never read the instructions that came with it.We used to call my wife high flame Annie she burned everything she ever tried to cook too much in a hurry.
They sure can if mistreated! You should have seen the warped cast iron skillets we found in my dad's house. Of course his definition of "adequately cooked" pretty much anything meant charred. If that burned bacon smell was gone by midafternoon breakfast hadn't been done to his liking. A miracle he never had a kitchen fire.
