When I had granite countertops decades ago everyone told me seal it once a year.
Phooey. I had my countertops for 14 years and sealed/polished them twice in that time. And the second time was when I was selling the house.

I found the advice about "maintaining" granite to be completely over the top.

Here's my advice:

Wipe up acidic spills before they dry because they can dull the sealant. (coffee, tomato)
Wipe up water that gets around your faucet. Soap and mineral deposits are the worst at that spot.
Don't bother with fancy cleaners. I got a cheap spray bottle and use distilled water, dawn dish soap and a bit of isopropyl alcohol as a cleaner.

Gives it a nice shine.

I don't prefer quartz and don't see what others do. That said though, I am aware that it seems to be the more desired counter lately.
I have had granite and quartzite and LOVE them. I love the look of marble but for me it's not so practical.
With granite and quartzite- I agree about the sealant. I think I used it once in about 10 years in our old house. I did constantly wipe down the counters though, and remember that ammonia free was the way to go. ( I mostly used Glass Cleaner like Windex but had to be ammonia free. This is only because of the sealant. The stone is super durable).
I pretty much do the same with quartzite. REally any cleaner ( water is fine too) is great as long as it's not with ammonia.
I am sure you are going to love your granite counters.

give it kisses every night to show it that you love it.

we had grantite countertops in our last house. no special care except keeping it clean (thats just how my wife is automatically, if i leave any drops or crumbs i am going to hear about it).

Right! I think the shiney smooth countertops lend themselves to being super clean. I love the feel of them and am constantly running my hands over them because you can't always see crumbs or spills.
I think I wipe them down way more than I did with formica.

I used white Corian in the summer place. I prefer it to stone. I have white-ish Silestone quartz going in at the ski condo. We probably won’t own it forever so I have to consider resale. In my opinion, you need to have a really big room with high ceilings and lots of natural light to handle most high end granite countertops. I loathe builder grade granite.

the previous owner of my house put in corian countertops. an unusual decision but one that i actually prefer.
