Is there a monitor that will measure the oxygen level in a room - I mean, one that doesn't cost thousands of dollars?

There are dozens of portable instant read monitors available online, some under $100

If you don’t mind telling us - why?
A common knowledge that oxygen is nearly constant in the air- 20-21%.
22% in an artificially enriched environment.

Unless the room is very well air sealed?
Are you building a dungeon and want to make sure your slave won’t die for the lack of oxygen?

The advantage is that this one does not need calibration- most do.
It depends how precise you need it.
Bare in mind that once activated- will run non-stop - and be careful with alarm setting

A crude one-off way is to buy a memorial candle in a tall glass jar, burn it down and clean it, then burn a votive candle in a shallow dish of water. Invert the glass jar over the votive until it is below water level, and measure how far the water comes up as the candle extinguishes from lack of oxygen.
