The pros don't use popcorn texturing very much anymore and advise against it because it's so hard to match and repair later on, and spiders like to build webs on popcorn ceilings for some reason. But there is a good reason to use it, if you are a novice builder installing drywall on the ceiling, filling and sanding the seams perfectly smooth is more difficult on the ceiling than the walls. If seams are not perfect, a knock down type texturing will show your errors. But a popcorn texture will hide your crappy seam work very well. As for the walls, if you want to hide your crappy seam job, use cheap flat paint, NOT GLOSSY or SEMI GLOSS paint, which will show every little imperfection.
