Does anyone have any clever ideas (with pictures) that they would like to share on landscaping around the drainage easement openings on either side of the driveway? On one side like most homes I have a mailbox that I would like to see incorporated in this space somehow.

Might be a good starting point.
What I would do is rip out the grass the grows along the sides of those drainage ditches and lay down some kind of permeable water barrier that prevents weed growth. Then I'd layer the base of the ditch with a light colored smooth river rock (the kind that looks like water skipping stones).
Next along the 3/4 of the way and up of the ditch and leveling out toward the street portion I'd spread pine bark. Then I'd plant some low level, water loving plants to give it some color. Nothing big as to pose a hazard to vehicles.
The barrier prevents weed growth and the absence of grass lessens the maintenance you have to perform on the awkward slope that a drainage area poses. No weed whacking or teetering lawn mowers. The plants pretty much self maintain due to the water saturation from the ditch.
If you post some pictures I can annotate this better probably, lol.
If you prefer a more elegant look, dry stack stone beside the "mouth" of the pipe up to the level of your driveway. This takes care of the awkward mowing angles and makes the driveway look like a short stone "bridge" ... You can much the flat top portion and plant low shrubs or flowers.
