My favorite one is by Rabbi Hillel, Pirkei Avot (the Mishnah): "If I am not for me, who will be for me? And when I am for myself alone (or if I am not for others), what am I? And if not now, then when?"
There are so many great Jewish quotes, both old and modern. Hillel has always struck me as one of the wisest of our ancient sages, and that quote of his that you posted, Chava, is a favorite one of mine, too.
I'll post a couple of modern quotes. The first is by Sheila Katz, C.E.O. of the National Council of Jewish Women. The second one is about Jews by a non-Jewish, controversial atheist.
