Now suppose this fictional person wanted to travel north through the state to Owensboro, then east to Covington to jump across into Cincinatti for a baseball game, then back into Kentucky to head towards somewhere in West Virginia. What would you recommend that they do and see? Or in other words does anyone have any suggestions on what I should do on this vacation I'm thinking about taking?

Some suggestions that wouldn't take you too far out of your route.
Owensboro: hit up Old Hickory BBQ. Try the mutton (I like the sliced) and burgoo, both western KY specialties.
Bardstown: My Old Kentucky Home, check out the quaint downtown, Maker's Mark tour (just down the road in Loretto), stay at the Jailer's Inn (I've never stayed there but want to, it is an old county jail turned into a B&B)
Lexington: horse farm tour, Keeneland, Woodford Reserve tour
Louisville: Riverbats game, Louisville Slugger Museum, Muhammad Ali Center, 4th Street Live, The Highlands
Covington/Newport: Newport on the Levee (shopping, restaurants, bars, nice aquarium), Hofbrauhaus (just across from Levee), Devou Park (great view of city), Mainstrasse (bars)
Cincinnati: Fountain Square, Mt Adams, Museum Center

On the eastern end, try the horse farms and horse park around Lexington. Check out some of the State Parks. Natural Bridge has some wonderful scenery, and the surrounding area, Red River Gorge, is absolutely breathtaking. Hope you enjoy your fictonal trip.

I would tell that fictional person they are missing a bunch of things to see and do just going north to Owensboro, then east. Besides all of western Kentucky with the lakes area, they would be missing Mammoth Cave, the Corvette Museum, Lincoln's Birthplace, Lincoln's Boyhood Home, My Old Kentucky Home, several distilleriesand I could go on and on. I hope this fictional person has a chance to come back again when they have more time to see the sites.

Hopefully. Hypothetically speaking they may have been told that Owensboro is where the lamb barbecue is, and so that's their first big destination point.
