I imagine Garden City has better train access and East Hills better highway access. Garden City has more shopping and restaurants. All about personal preference.
Train line for EH is Oyster Bay. I rode that one for 30 years ...a slow boat for sure. Roslyn Schools vs GC in my opinion is a push. Shopping and accessibility to same, GC over EH. Slight edge to EH in terms of driving for LIE, Northern State, Meadowbrook, Grand Central. Lastly and this may or may not be a consideration for you. GC is largely Christian, and EH largely Jewish.
Would rather live somewhere with a "village" feel that GC has with 7th St and even Covert Ave right next door in Stewart Manor/Floral Park. Places like East Hills are just zip codes to me.
I would highly suggest Garden City. I personally moved to Western Section about a year and a half ago. It's a great neighborhood and easy commute to LIRR. Most comes in the GC area are walking distance to one or more LIRR stations. You can walk to town in Western Section (Covert Ave) or 7th in GC.
Crime is low, I personally have ADT, but I moved from Queens and first thing I always think of. There have been people going into opened cars at night, so just lock your doors - like you should anywhere.
East Hills has the Port Washington line which is great, but good luck getting parking at their LIRR lots. Also, I think the people are very different there.
I am having happy with GC, easy to commute to NYC and great shopping all close by.
I live in East Hills, but I think I rather live in Garden City. The restaurants in East Hills/Roslyn all suck.
Its funny how in 2015 during my house hunt, I never even thought about Garden City (was only looking North Shore).
But if I knew then what I know now, I would definitely have looked into GC.
