I think they were interested in an independent sort of place and not a chain. I don't think we have even one Red Lobster in Maine anymore.

Is it true that you can have a restaurant in Portland, receive health code violation tickets every year, and it takes decades of this before you actually have to clean your kitchen?

Somehow that seems un-sanitary, or is it nepotism, bribery?, or just Idiocracy?

Maybe it is just the swanky restaurants that get to act that way. I bet the small restaurants hidden in any nook or cranny are the cleanest, and really the best places to eat.

I dont believe its true, if an inspector finds violations, you have a certain time period to correct them....now it does depend on the violation, an inspector can fine you on the spot if its very serious, they can even shut you down.

I have a friend that is an inspector from the usda, I ask him alot of questions... I've also dealt with many in my past,

I do know if you have a complaint, and you call it into augusta (dept of usda) they take that very seriously,

Most restaurants have, or should have strict sanitation systems in place (haccp plan)
all it takes is for a few violations to go public, and that restaurant, will be done.

I agree. Though from recent news articles about Portland eating establishments it sure sounds like inspectors there allow code violations to extend for years before they finally decide to enforce them.
