Think I will make some Colcannon mashed potatoes (made with thick bacon, leeks and cabbage) to go with it - more work but so yummy. Beet greens with bacon - hmmmmmm. Not a bad idea as well.

The Corned beef dinner was a hit with everyone present. We were subdued this year as we just lost an "Irish" family member. My Sister-in-law Kathleen passed away two Sunday's ago at the young age of 41 after battling cancer for over ten years.. We were not in a celebration mood this year but felt Kate would have liked for the family to get together and remember her over the traditional St. Patrick's dinner. It wasn't the same without here here and the few Irish ballads we sang after dinner brought more tears than usual. We toasted her memory and will do the same tomorrow on the real St. Patrick's Day and every year as long as we're around. She was a beautiful Irish lass and is sadly missed.
