I am looking for ingredients for Thai cooking on Maui. Galangal, Tamerind, Thai garlic, kaffir, kapi, to name a few things. We just took a Thai cooking class while in Thailand (where else?) and are anxious to try out a few recipes. So far these things are hard to find. Tried some farmer's markets, Mana Foods, and Whole Foods. No luck.
Those are special ingredients you won't find in many places, even on the mainland. I would ask again at the farmers markets, maybe the vendors would know someone who grow them. Or ask for them on craigslist farm+garden (maui farm & garden classifieds - craigslist) to see if any of the people lurking there can hook you up. Maybe there are some Maui gardening forums online to get in touch with he people who grow the stuff themselves.
Tamarind is used in Filipino cooking, I think, so you might try some Filipino shops.
There's a Thai restaurant on Kaua'i that grows their own Thai basil out back, and other ingredient probably as well. That tells you how available they are through wholesalers.
Filipino stores, health food stores and farmer's markets are probably the best bets. Otherwise, ask your gardening neighbors if they have any of the ingredients in their yards.
Thanks everyone. Mana did not have Tamarind paste when we were there last. I know we can get all this stuff in Seattle, where we used to live and have bought it there previously. We will either order on line, or have Seattle friends send a care package.
