Although I try to avoid eating when I am traveling on the road, it is sometimes inevitable and I have been lucky to eat in good restaurants and I want to invite you to share recommendations of those jewels that you can find in the middle of the desert.
Stop where you see a dozen trucks parked on the side of the road. There are little cafes there that the best simple food in the country. Not on toll roads. Doubtful that any one can be assmed better than the others, but some might have matching spoons..
The restaurants without the big logos or chains...seriously! When we drive down to Mexico: we always stay and eat at local restaurants and love trying Mexico's different regional foods....I am only familiar with Jalisco food since my family is from there.

This is so right, once I went to Torreón and before arriving in the city we arrived at a restaurant that was a simple house on the road side, we tried the best green roast I've had in my life.
In many areas, the 'better' restaurants are in hotels, even small run-down hotels. Look for the Bimbo bread drivers....they always know low-cost, safe hotels with the best eateries.
