Some of those numbers seem too high. Restaurants take in a lot of cash which must make them ideal for money laundering.

C'mon, Swan averages $85K/day gross sales? One of the highest grossing restaurants in the entire USA? Swan? No freakin way! The wait staff would be taking in about $15K a day just in tips, making six figure incomes.
Maybe you can order the roasted chicken with a kilo on the side.

Yeah Joes does 38mm+++ in 9 months of the year and they have one location!

Joes Stone Crab does 38mm in 9 months (closed 3 months) and the staff literally make careers out of working there. I had lunch there last January and it was $700 (4 people, 3-4 alcohol drinks total, no expensive wine).

Yes, I noted earlier Joe’s was a glaring omission….and besides being closed for 3 months their signature item, Stone Crabs, is not available for sale for 5 months out of the year!!

Consider the Sunday brunch at Four Seasons Brickell….includes all you can eat stone crabs, shrimp, oysters, grilled meats, salads, juices, omelettes, pasta station and desserts for $110 per person without alcohol. Will cost you less after tax and smaller tip than Joe’s and you will get a lot more.

Yeah weird that its not on there, but I'm sure there is a reason. Perhaps all restaurants don't publicize their sales, especially independents.

When I was in the restaurant biz, a lot of my servers were working at our hotel or restaurant until they could get a job at Joe's or the Fontainebleau ones...and this was in 2011-2012..those servers there made 6 figures and had summers off. Some even applied for unemployment during summer.

Heck I had a server at my breakfast restaurant at Doral make $75k year with 2 months off in the summer. 10 years ago, $75k was enough for a single man. He'd come in at 6am and be gone by 11:15-11:30AM, 5 days a week, and get benefits & 401k matching as well as hotel discounts. One of our dinner restaurant servers went to Hakkasan at the FB and made $125k, only working dinner. They pooled tips and would get celebrities on a weekly basis, so no one was ever fighting over tables.
