Specifically the Ike jacket: are only officers going to be authorized to wear it? Or just optional for everyone, wear whichever coat you feel like today?

As I understood the term the "Ike jacket" did not have the lower uniform pockets as it cut off at the waist. While the US Army went back to the WWII color scheme the material and cost saving jacket adopted then is not an authorized new service uniform jacket

The Ike jacket had a fairly long history. When I was in the Marine Corps during the earliest part of Vietnam the Corps had it’s own version of the jacket. It wasn’t issued to new recruits but was worn by some of the old senior NCO people.

Why pink, does pink camouflage against the enemy? Or is it virtue signaling for women rights?

It is the nick name the color scheme picked up in the 1920's. After a season of traditional Army blues for service, non combat dress for some reason the Army decided to change to a WWII tradition. Perhaps because the Blue is associated with the wars against Native Americans through the imperialism of the Spanish American War. But more likely after a generation they found that as the dress uniform the Army Blue was too expensive to maintain and the Army is returning to service uniforms rather than wearing combat uniforms in non combat or physical working areas.

This I think is the answer but being a soldier all of my life and having had many uniform changes (dress as well as service uniforms), I can tell you that it is just business as usual. A new guy takes over and he wants to wear a beret so he makes it part of the uniform. All par for the course. I will also say I do like the change and wish I were still in to get the new uniform.

I’m retired so this new dress uniform has zero effect on me, but I’m not a fan of it, but over the year or so, its growing on me... A little.

IMHO, the Army should have stayed with black dress shoes with this uniform AND ditch the current style they’re using for the Service Cap, aka Bus Driver Hat and simply stayed with the current pattern of the dress cover, but obviously with the new color. The new service cap looks ridiculous since it appears to be way over sized and has that Soviet/North Korean look to it... I guess being 6’ tall, I don’t need my cover to make me look bigger.

I know that the Army wants to look Army, but the answer should be a mix of the old and new. Personally, I like the current Army Blue Dress Uniform and feel that they should stay with it, but for a Class “B” uniform, authorize the wearing of a khaki or a shade of khaki, to be worn with the current dress blues pants with either the current blue service cap or beret... I know it would be too Marine-ish, but the current Class “B” with the white shirt sucked. And this minor change would have been a lot cheaper than going with a whole new uniform, especially on E-1s to E-5s. Obviously, officers and senior NCOs can absorb the cost of constant uniform changes, which I agree is part of the “Army Experience.”
