Can anyone please refer me to a few "Religion Census" websites? I am primarily seeking a census for the Jewish religion in smaller cities? Thanks!

City-Data gives breakdowns on religion for every city in Missouri. The number of folks practicing Judaism in rural Missouri is small and would fall into the "other" category in most places. It's a little time consuming as you'd have to visit each city's page in City-Data and look at the breakdowns for each one.

Also - there are Synagogues in the following Missouri cities:

Ballwin, Chesterfield, Columbia, Creve Coeur, Frontenac, Jefferson City, Joplin, Kansas City, Lake Ozark, Rogersville, Saint Louis, Saint Peters, Springfield, St Joseph and University City.

Also - visit this URL. Click on the profile for each congregation to see how many members it serves. These are just the "reformed" synagogues. The only one with a religious school is the temple in Rogersville, which is near Springfield.

Thanks, Shadowcarver, for building on my post. While not Jewish, I've had a deep interest since visiting Israel several times in the 70s. That would be during a brief period when wearing a flak jacket was not required.
